El Pato, Cajamarca, Peru. Washed and decaffeinated using the Ethyl Acetate method — EA is derived from fermented sugarcane, which makes it one of the gentler decaf processes. Less of the stripping-out quality you get from harsher methods. The cup holds up: pear, milk chocolate, toffee. Drinks cleanly.
