We've been brewing this at the bar and the starfruit on this one is real — unmistakable from the first sip. It was the standout from our recent cupping session and we wanted to make it available to take home.
The ETH47 is an Ethiopian variety grown at Corpachi Farm by Edgar Gutierrez in the Cordillera highlands of Panama, at 1450 metres. It was sourced by Jonathan Vaz Matias and hand-carried from Costa Rica. The natural process keeps it fruit-forward and expressive — sparkling acidity up front, mango sweetness through the finish.
Apollon's Gold roasted this on their 2021/2022 profile to
honour the bean's delicate structure. It rewards patience.
